Era la domenica mattina la giornata dedicata alla preparazione del ” tuccu “,sugo alla genovese. Una preparazione che coinvolgeva tutta la famiglia perché la sua cottura, lentissima, iniziava all’alba come da tradizione. Una ricetta che, spesso, viene realizzata anche per il pranzo di Natale.
Gli effluvi pervadevano l’intera casa e la sua preparazione, come detto lenta a e minuziosa, era un fidanzamento senza tradimenti che si protraeva con lo sposalizio sul fare di mezzogiorno. INGREDIENTI PER U TUCCU
SUGO DI CARNE ALLE GENOVESE
500 gr. di manzo (nella coscia o nella culatta)
50 gr. di midollo di bue
1 litro di brodo
5 pomodori maturi , in alternativa un cucchiaio di conserva sciolta nel brodo oppure quattro cucchiai di salsa in bottiglia
Uno spicchio d’aglio
Una carota
Una cipolla
Un ciuffetto di prezzemolo
Un gambo di sedano
Una foglia di alloro
Due rametti di rosmarino
Due o tre funghi secchi
Un bicchiere di vino rosso
Un cucchiaio di farina (da abbrustolire)
